About us

The Taste-Italia cookery schools were started in 2002 by Leo and Maureen Smith. They are found in six beautiful, historic locations in Tuscany and Le Marche, and there is also a local school in Ramsden Heath, Essex.

Italian schools

With six schools in stunning locations and cookery at the beautiful Monastery of Vallechiara in Rome (new this year), all Taste-Italia courses reflect the traditions of the regions they are in. Locations range from by the sea to cities and mountains, and we use local cooks and traditional recipes.

The range of courses is designed to suit different budgets, from Michelangelo's masterpiece the legendary Villa San Michele in Fiesole to a simple agriturismo in the spectacular Riviera del Conero. We list four historic palazzi as cookery venues, with one Princess and three Contessas.

Prices include hands-on tuition, accommodation, breakfast and dinner. They do not include flights or car hire.

Taste-Italia Essex

In October 2004, we started our new garden school in Billericay with a year-around programme of day classes, and the school has an extensive kitchen garden which supplies the classes with fresh and seasonal vegetables.

Taste-Italia was awarded the Spirit of Enterprise award for 2005 by the Essex Newspaper Group. It has received extensive press coverage by the national press, and has been featured on BBC 2 and Channel 4.

Celebrity and Guest Chef Programme

During 2006 we have a summer and autumn programme of guest chefs, including Gennaro Contaldo who has cooked at the school since we opened, as well as visiting chefs from our schools in Italy.

Gardening/Cookery

Another innovation in 2006 was the introduction of gardening and cookery days, which has proved very popular with our clients.

We have partnered with Mike Thurlow, the head gardener at English Heritage's Audley End, and we have a fully organic growing programme with monthly classes.
